Roasted Brussels Sprouts and Cherries

Ingredients

  • 2 tbsp olive oil (We use Garcia de la Cruz)
  • 1/2 pound fresh brussels sprouts, cut in half
  • 1/3 pound fresh cherries, pitted and halved (We used Tasmanian)
  • 1/2 cup Feta cheese
  • Salt and pepper to taste

Instructions

  1. Heat oven to 375 degrees.

  2. Place the halved brussels sprouts and cherries onto a baking sheet or roasting pan.

  3. Drizzle with olive oil and mix to ensure all pieces are covered; season with salt and pepper.

  4. Sprinkle Feta cheese on top.

  5. Roast for approximately 25 minutes or until brussels sprouts are cooked thoroughly.
