Citrus Watermelon and Asian Pear Salad

Ingredients

  • 1/2 Golden or regular watermelon
  • 1 whole Asian pear
  • Juice of one lime
  • 1 tbsp rice vinegar
  • pinch of sea salt
  • (optional) Dragonfruit

Instructions

  1. Chop the watermelon into bite-sized pieces.

  2. Slice the pear (but don't peel it) and cut the slices in half.

  3. If you're using the Dragonfruit, peel it and chop it into small bite-sized pieces.

  4. Place all the fruit in a bowl.

  5. Add the remaining ingredients into a separate bowl. Mix thoroughly. Pour over the fruit and marinate for 15 minutes at least, or while you make the crema.

  6. Serve the salad on top of a smear of the crema, or use the crema as a separate dip. Best served cold!
