Persimmon Overnight Oats with Pumpkin Pie Spice

Ingredients

  • 1/2 cup milk of your preference I use coconut or almond
  • 1/4 cup Greek yogurt
  • 1/4 cup persimmon puree
  • 1/2 packet natural sweetener I use Stevia
  • 1/2 tsp vanilla
  • 1/2 cup oats
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Combine all ingredients. Taste to be sure you're happy with the sweetness (you may want more of the sweetener) and the pumpkin pie spice level. Place it all in one small glass jar. Cover tightly and refrigerate at least 3-4 hours, but overnight helps flavors meld more. Enjoy!
