Combine bourbon, lemon juice, peach puree and hot honey in cocktail shaker.
Add ice; shake 20-25 seconds to thoroughly combine and reach icy cold status.
If you choose to rim the glass, pour some hot honey into a shallow bowl; roll glass edge in it (the entire rim or just part of it) and then dip into sugar crystals, also in a shallow bowl. This part just adds to the sweet/spicy flavor profile
Pour into rocks glass and serve! If possible, add one large ice cube or sphere to glass to keep chilled.
