Eastvale Rubio’s Opens: Try the Shrimp Tacos and Sangria

If you like Rubio’s, or just good, quality fast Mexican food, you’ll want to check out Rubio’s Coastal Grill. Rubio’s opened back in 1983 with its first restaurant being a food stand in Mission Bay, and it has since grown to almost 200 restaurants. Rubio’s is known for making conscious choices, using certified sustainable seafood, helping to preserve ocean species and ensuring a healthy ocean for future generations….and Rubio’s sangria is just plain good. It’s even better now with the new Eastvale Rubio’s location.

I was invited to attend the pre-opening media and guest party for their new location in Eastvale, which opened last week on April 6, and had a fun evening of musical entertainment, dinner and even dessert. There was even entertainment, with Christopher G. Watson playing song requests. (Check him out on Instagram at @CGWMusic.)

Rubio’s Coastal Grill’s menu always includes seafood, chicken and steak entrees, but they also have limited seasonal items depending on the location.

The evening of the party, the Eastvale Rubio’s was offering the new Wild Argentinian Red Shrimp taco plate, which comes with refried beans and tortilla chips. Take a peek.

The husband got a Grilled Shrimp & Bacon Burrito. If the bacon alone doesn’t get you, the shrimp, citrusy rice and avocado will.

Did you know that in addition to a full range of fountain and other non-alcoholic beverage choices, you can order beer, wine or Rubio’s sangria?

Rubio’s Sangria is fantastic and pairs perfectly with the coastal grill menu. I also tried the Chardonnay, which is a great choice if you’re eating seafood. Wine, sangria, it’s like getting our vitamins in fruit juice, right? One can pretend….

Where is the New Eastvale Rubio’s?

So good! Rubio’s makes for a good sit-down fast dinner, but as always, the food is available for take-out. Located so close to all the shops on Limonite just off the 15 freeway, it’s an excellent choice if you’re heading over to one of the many sports games and events located in Jurupa parks and want to take your dinner with you.

The Eastvale Rubio’s crew is ready to greet you and serve you! This location’s a good one for us, as we are often on the 15 freeway heading home from an event; it’s only about 10-15 minutes from our house, so we can drop by, order some favorites and take it home. Or we might just need to stay there and enjoy more of their sangria.

Thanks for inviting us to your pre-opening party and glad to see you in Eastvale now! I’ll be back soon to try the Panko-Crusted Crispy Shrimp…and to have more Rubio’s sangria.
